why not try a section with the rest of the world, and the sub-sections within that can be mexican fighters, asian fighters, aussie fighters(all 4 of them that is), eastern european fighters, peurto-rican fighters, etc, etc?

that way, there are no complaints as to why a specific country hasn't got its own section, and for those who would like to find out more about a particular nations fighters then they can browse as they please.

But I'm not even sure we need this section. We should be able to talk about fighters from any country at any level in the general discussion area.
