I have been working with a somewhat similar diet myself and have seen good results. However, I have eliminated all meat/fish and dairy from my diet. This has pushed me to eat more vegetables and fruits. I get plenty of protein through a vegan protein powder and lots of quinoa/legumes. Fat has melted away despite my occasional cheat days. Let me see if I can show you what I eat...

Breakfast:
Smoothie containing:
kale
spinach
chia seeds
vegan protein powder
any combination of oranges, blueberries, strawberries, raspberries, banana, kiwi, pineapple...
spirulina
soy and almond milk

Snack:
Quest protein bar
Banana

Lunch:
Salad with spinach, kale, quinoa, black beans, chickpeas, cucumber, red pepper, tomatoes, red onion. I eat as much as I can stomach and I take 1-2 hours to finish.

Snack:
Apple
Banana
Almonds

1-2 hour workout (boxing/running)

Dinner:
Amy's soup with quinoa

Snack:
Banana
Quest Bar or water with vegan protein powder.

I have gotten to the point to where I can jump rope for an hour or run up to 10 miles and not really feel tired at the end of it all. Previous diets have not allowed me to reach this level of fitness.
